This year we are honoured to have cooking demonstrations by two of the best chefs in Australia: Peter Manifis and Don Hancey. These two brilliant chefs use local products to create their tasty morsels. Manjimup is known for its agriculture, viticulture, horticulture & aquaculture and is rich with fine produce over all the seasons of the year. With the "Black Truffle" making its own mark, The Southern Forests Region could well be the gourmet food bowl of Western Australia. Cauliflowers, Cabbage, Brocolli, Carrots, Capsicum, Potatoes, Pumpkins, Apples, Pears, Apricots, Peaches, Cherries (Of Course), Beef, Lamb, Marron, Trout, Cheeses, Milk - and so much, much more.
These demonstrations will be held at 11:00am, 12:00pm & 1:00pm and are located at the top end of Brockman Street. They are sponsored by Healthway: Act, Belong, Commit.
Sea food and eat it! would have to be Chef Peter Manifis' mantra.
Pete's love affair with seafood stems from his youth growing up in the North of Western Australia. The son of a commercial prawn fisher Peter was "surrounded by an ocean of seafood" with his folks supplying their own fish and chip shop with the freshest of catch.
Pete's training under renowned Chef Alain Faberge of the national award winning Loose Box fame was disciplined and thorough and put him in good stead to make a real name for himself as a skilled and well trained chef.
Pete went on to win a Gold Plate Award for Best Seafood Restaurant at Perth's Zafferano and his current position is Executive Chef at Incontro Restaurant on the banks of The Swan River in South Perth. Incontro's focus is top quality seafood and meats and is arguably the best seafood restaurant in Perth.
Peter has cooked at events around the world, the latest being in May 2011 when he cooked for 30 of Hong Kong's top chefs at the Great Wine Estates of Western Australia Promotion at the Grand Hyatt in Hong Kong.
Along with Don Hancey, Pete has represented and displayed Australia's finest seafood products at the European Seafood Expo in Brussels which attracts over 100,000 trade visitors.
Peter currently consults to a number of seafood companies focusing on marketing and promotional strategies. Pete loves nothing better than being on stage sharing his passion and knowledge of all things seafood.
Don Hancey is recognised as one of Western Australia's most dynamic and innovative chefs for his simple, yet brilliant, ability of pairing regional produce and premium Australian wines.
Don's 30-year strong career has seen him in a vast selection of roles including management and catering for prestigious wineries such as Cape Mentelle, Voyager Estate, Howard Park, Cullens and West Cape Howe.
In addition Don has received numerous invitations to be a guest chef throughout the world. Some of his experiences include:
